Panagiotis Arapitsas is an assistant professor at Department of Wine, Vine & Beverage Sciences of the University of West Attica since November 2021. He got his degree in Oenology and Beverage Technology in 2002 from Athens Technological University of Applied Sciences and later continued his studies at the University of Florence where he obtained a master in Methods of Synthesis in Organic Chemistry in 2004 and a PhD in Polyphenols Chemistry and Food Quality in 2008. During that period, his research activity was divided in laboratories of Analytical Chemistry, Organic Synthesis, Electrochemistry, Microbiology, and wineries. In 2010 he joined Fondazione Edmund Mach, as researcher, where his activity was focused in Food and Wine Metabolomics. He taught at the University of Trento (Italy), TEI of Athens and West Attica University (Greece), University of Nova Gorica (Slovenia), and Universidad de Concepción (Chile). 

He is member of the Board Committee of «Groupe Polyphénols», member of the Scientific Committee of In «Vino Analytica Scientia», member of Metabolomics Quality Assurance and Quality Control Consortium, Editorial Board Member in Scientific Reports, and Assoccietaed Editor in Frontiers in Chemistry and Frontiers in Nutrition: Food Chemistry 

His main research activities are towards Wine Science, Food Chemistry, Metabolomics, Mass Spectrometry, Chromatography, Organic chemistry, Analytical Chemistry, Big Data Analysis, F.A.I.R. data management, Polyphenols, Circular Economy, and Aroma compounds.
